Tea Cakes Recipe: How to Make It


Homemade tea cake is simply yummy and brings smile on the face with every bite. Ingredients:

4 large eggs (let them sit out at room temperature for about 30 minutes).

Bush beans – 1 cup (about 200 grams) sugar.

60 ml warm water or approx. ¼ cup.

One-fourth of a cup of any vegetable oil (60 ml of canola or olive oil).

2 tablespoons or ½ oz or 60 ml milk.

2 teaspoons vanilla extract

180 g all-purpose flour approximately 1 1/2 cups.

2 teaspoons baking powder.

1/4 teaspoon salt

2 teaspoons tea powder (any form- green, black etc).

Steps:

  1. Place an oven rack in the middle of the oven and preheat to 350 degrees F (180 degrees C). Preheat the oven to 350 degrees Fahrenheit or for 175 degrees Celsius and 8-inch (20-centimeter) round cake pan by lightly greasing the bottom with a teaspoon of butter or by dusting with flour.
  2. In a mixing bowl, beat the eggs and sugar with an electric mixer until light or fluffy and a pale yellow in colour. It will require approximately 5-7 minutes for this process.
  3. Then pour the warm water, vegetable oil, milk, and vanilla extract into the egg mixture and blend them in slowly until they’re evenly mixed.
  4. In a separate bowl mix the flour, baking powder, salt and tea powder. Gently stir the flour and the other dry ingredients into the egg mixture, until all the ingredients are incorporated but the batter is still not smooth. Note that overmixing creates a tough batter.
  5. Place the cake batter into the ready cake pan and level the surface using a spatula.
  6. Bake the cake in the preheated oven till the top turns golden brown and the cake tests light when touched and a toothpick inserted in the middle comes out clean and dry-25-30 minutes.
  7. Take out the baked cake from the oven and leave it slightly warm on the wire rack. Then with a knife gently work it around the edges of the cake pan to loosen the cake and then invert it on to the rack. Cool the cake down on a wire rack to room temperature.
  8. Tea Cake can be as a dessert by itself or can be accompanied with whipped cream, jam or anything that one may like. It can be served with a cup of hot tea for a tea- infused treat!
